Donuts are everyone's favorite snack or dessert, they can be sweat or even savory! In this blog post I will be showing you how to make delicious cinnamon and nutmeg donuts.
Ingredients
Batter Bowl 1:
2 Eggs
15 ml melted butter
5 ml vanilla extract
250 ml milk (3% fat)
Batter Bowl 2:
2½ Cups All-purpose flour
10ml Baking powder
1 Cup sugar
5 g Salt
2.5 g Ground cinnamon
2.5 g Ground cloves
1 g Ground nutmeg
Icing Bowl 3:
5 g Ground cinnamon mixed
60 g Caster sugar
Instructions:
First let's do our mise en place.
So gather all the ingredients into one area.
Measure out the quantities you require.
Preparation:
Melt your butter in the microwave, e.g. 600 watts for 20 seconds, until runny.
In bowl 1:
Crack and beat 2 whole medium eggs
Add 15 g melted butter.
Add 5 g vanilla extract
Add 250 ml milk (3% fat)
Mix until combined, approx 30 seconds
In bowl 2:
Combine the
2½ Cups of flour
10 g baking powder
1 cup sugar
5 g salt
2.5 g cinnamon
2.5 g ground cloves
1 g of nutmeg.
Mix until combined, approx. 30 seconds
Pour in the eggy mixture from Bowl 1.
Beat this all until smooth.
The donut batter should be allowed to rest for 30 minutes, cover with a towel.
In a pot or high walled frying pan.
Pour in 2.5 cm or 1" of vegetable oil.
Preheat the vegetable oil to 185C/365F.
Use a thermometer.
Icing:
Combine
60 g caster sugar
5 g of cinnamon.
Pour a little vegetable oil onto some kitchen towel and use the towel to smear oil on the Piston end of the donut dropper as well the inside of the hopper.
Load the hopper careful, keep it closed until ready to drop.
When dispensing, use the tree finger method, keep the piston open for 3 seconds, ensure that the dispenser is close to the surface of the hot oil.
Flip the frying donuts every 15 seconds.
Remove the donuts from the oil when golden brown.
Immediately sprinkle with icing.
