Banoffee Pie, Babish homage


Banoffee pie: A sweet caramel and banana creation, well suited to a anniversary confection, which is exactly what this was made for.

I made this deliciously unhealthy confection for mine and my wives 20th anniversary. It was sweet and totally worth the effort, can't be left in the fridge for long though sadly.


A quick crash course on the history of the banoffee pie: It's an English dish created by Nigel Mackenzie and Ian Dowding, it was an absolute hit in their restaurant, so much so that they couldn't take it off their menu! At one point it was called an American dish and Nigel put out a 10'000 Euro prize to anyone who could prove that it is an English recipe.


Relatively safe to make, so long as your condensed milk doesn't explode. If you are worried about this, just buy a jar of caramel and use that instead.


This pie is not approved by weight watchers, lol.


INGREDIENTS

Dulce de Leche

400 g can of sweetened condensed milk


Pie Crust

Biscoff biscuits 250g x 2

100 g unsalted butter


Whipped Cream

250 ml heavy cream (33% fat)

2 Tbsp sugar

1 Tbsp Vanilla extract


2 bananas, sliced into 5mm thick


Dark Chocolate 1 square
